Artisan Bakery & Café · Onalaska, WA

We bake the way we mean it —
slow, honest, and without shortcuts.

Every loaf, pastry, and seasonal special at Brooks Baked Goods starts with the same assumption: good ingredients don't need to be rushed. We ferment, fold, and proof on our own schedule — then serve you what's ready.

Our story

Rooted in a simple belief: bread deserves time.

Brooks Baked Goods began as a home kitchen project and grew into a neighborhood presence — not because of marketing, but because people noticed the difference when something is made with patience.

We bake in small batches, using naturally leavened doughs, locally milled flour, and seasonal produce from the surrounding area. Nothing is rushed. Nothing is frozen. If it's on the shelf, it went into the oven that morning.

Our café sits at 1752 State Highway 508 in Onalaska, a place where you can grab a loaf to go or pull up a chair for a coffee and something still warm from the oven. Either way, you're getting what we'd make for ourselves.

Our process

The craft behind every bite.

Source

We choose flour, butter, fruit, and other ingredients carefully — favoring local mills, regional dairies, and seasonal availability over convenience.

Ferment

Our doughs rest. Long, unhurried ferments develop flavor that no shortcut can replicate. This is the step most people never see — and the one we refuse to skip.

Bake

Oven spring, a deep crust, an open crumb — these are the results of heat, timing, and technique. We watch every batch and adjust to the day's conditions.

What comes out of the oven goes straight to the shelf and to the people who show up. No warehousing, no holding tanks — just fresh bread, served fresh.

"The kind of place where you notice the bread before you notice anything else — and then you realize everything else is pretty good too."
